minutesThis kind of mash will bring variety to your menu. A tasty side dish that goes great with a variety of meat, fish or vegetarian meals.
Ingredients
400g Potatoes
400g Celeriac root
100g Organic butter
200ml Organic Milk or unsweetened plant-based milk
1 Tsp Salt
A pinch of white pepper
Directions
- Peel the potatoes and celeriac, cut into small cubes, boil in salted water until soft. Strain and mash.
- Season the puree with salt and a little white pepper, round off the taste with milk or cream and butter.
Notes
- CELERIAC, or celery root, is a good source of fiber and vitamins B6, C and K. One cup of celeriac has around 75 percent of your daily recommended intake of vitamin K, a fat-soluble vitamin with a wide range of health benefits, especially for our bone health. It also contains about a third of the carbohydrates as potatoes per portion, which makes it an ideal partner to lower the carbohydrates of your mashed potatoes. Celeriac has a nice umami flavor, that hits our brain’s glutamate receptors in a good way.
