
Tipsy Christmas Chia Pudding

minutesThis is a great way of enjoying a dessert, without feeling guilty due to too many calories or fats.
Ingredients
½ cup milk – dairy or non-dairy
1 tbsp chia seeds
1 tbsp pure cocoa powder
2 tsp maple syrup
½ tsp liquid vanilla extract
1 pinch ground cinnamon
1 pinch ground clove
1 tbsp raisins
1 tbsp rum
2 tbsp walnuts, chopped and toasted
Recommended Toppings: roasted walnuts and tipsy raisins (raisins, soaked in rum)
Directions
- Cover raisins with rum, reserve. Roast chopped walnuts, reserve.
- Add ½ cup non-dairy milk, 1 tbsp chia seeds, 1 Tbsp cocoa powder, 2 tsp maple syrup (or honey), and ½ tsp vanilla extract to a bowl. Mix, cover and refrigerate for minimum 3 hours or overnight.
- Pour chia pudding into nice glasses (e.g., for sherry or sparkling wine), add cover with soaked raisins and on top with toasted walnuts and serve.
